Cooking:
We hold each of the mantilakia under running water, soaking them wet and then holding them upright in order to strain them. We leave the mantilakia spread on a towel for 5-10 minutes until they get softer. We cut them in half and stuff them with a filling of our choosing, sweet or salty. We drizzle half a coffee cup of oil on the pan. Then, we fry the mantilakia from both sides until they are well browned. We add the same amount of oil for each new frying.
